Felice, these are wonderful! They are just how I remember them from Germany, over a decade ago. Ok, realising it sounds like I'm old now! 😲 And yes I was a bit surprised that they got bigger, but I guess that's what pasta does 😮. I didn't bother to boil the spinach, just put it in the food processor with the onions and meat (half pork, half beef). The pasta I used half plain flour and half type 00. For someone that has never made Maultaschen or pasta before, I'm quite proud how they turned out. Thank you for sharing and your tips! 🌸

I'd say those are perfect! I can't believe that's your first time 😳 the first time I made them they certainly didn't look that great! Great tip about just blending the raw spinach. I'll mention add your tip to the recipe later :) I'm so happy these turned out so well for you! 💕
