I just made this with some plums I'd had sitting in the fruit bowl for ages.It was lovely and light!
I actually added an egg to the wet ingredients as it seemed very similar to a muffin mix.I served it with custard.
Delicious and very easy!
I would definitely make this again, perhaps even with other fruit. Pears would be a nice alternative, perhaps in a chocolate cake batter instead??
