Ingredients

  1. 1 tbsp.olive oil
  2. 1 lb.ground Italian sausage
  3. 1/2yellow onion, finely diced
  4. 2large carrots, peeled and diced
  5. 2 stalkscelery, diced
  6. 4 clovesgarlic, minced
  7. 1 can (28 oz.)unsalted crushed tomatoes
  8. 3 cupsunsalted beef broth
  9. 1 can (15 oz.)unsalted cannellini beans, drained & rinsed
  10. 1 can (15 oz.)unsalted light red kidney beans, drained & rinsed
  11. 1 1/2 tsp.dried basil
  12. 3/4 tsp.salt
  13. 1/2 tsp.each dried oregano, pepper
  14. 1 cupditalini pasta
  15. 1/2 cupfreshly grated parmesan cheese + more for topping

Cooking Instructions

    In a large skillet, heat the oil over medium-high heat. Once it's hot, add the sausage and cook until its browned throughout, breaking it up as you go. Once its browned, place it on a towel lined plate to drain off some of the grease and set it aside.

    Grease your slow cooker, then add the sausage, onion, celery, carrot, garlic, rinsed beans, crushed tomatoes, broth and seasonings. Give it all a good stir, then pop the lid on and set the heat to low for 5-6 hours.

    Once the soup is ready to eat, heat a large pot of salted water to a boil. Cook the ditalini pasta according to package directions, then drain and stir it along with the 1/2 cup grated parmesan into the soup. Then taste the soup and add any additional seasonings you think it needs. That's it!

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
