Ingredients

  1. 2 headsBrocolli, cut into small florettes
  2. 2peppers, diced into small pieces
  3. 1 bunchspring onions, sliced finely
  4. 2large carrots, julienned and sliced into small pieces
  5. 300 grice
  6. 3 clovesgarlic, mushed with saled
  7. 2 spoons(crunchy) peanut butter
  8. 1 packetpeanuts
  9. Thumb-sized piece of ginger, diced finely
  10. 1 tspcayenne pepper
  11. Salt and pepper to season
  12. Soy sauce
  13. Juice of one lime
  14. Vegetable oil

    Prepare all of the vegetables as described above

    Lay the broccoli and peppers on a baking tray. Drip the vegetable oil and season with salt, pepper, cayenne pepper. Roast at about 200 c until it starts to char (about 15-20 mins). Stir half way through. If I have it, I sometimes add honey to make it sweeter.

    Pour oil into a large pan and also add the carrots, ginger and garlic. Let simmer at a low temperature for about 5-10 mins. Then add the peanut butter to the mixture, squeeze the lime juice and pour the soy sauce in.

    Prepare the rice.

    When the vegetables in the oven and pot have been cooked, mix everything (including the rice) together. Put a portion in a bowl or plate. Blitz the peanuts, and sprinkle on top to serve.
