Mushroom and Leek Pasta with Chicken

Ingredients

2 servings
  1. 1chicken fillet
  2. 1leek
  3. 90 gMushrooms
  4. 1 tbspTarragon
  5. 200 gGreek yogurt or cream if not watching your weight
  6. 1 clovegarlic
  7. 200 mlchicken stock
  8. Salt
  9. Pepper
  10. Olive oil
  11. 75 gpasta any type

Cooking Instructions

    Heat a large fryingpan, add the olive oil. Slice the chicken and stir fry for about 3 to 5 mins

  2. 2

    Slice the mushrooms and leeks, chop the garlic, add to the chicken and cook for 3 mins stirring all the time.

    Add the stock, bring to the boil and simmer until reduced by half. Add the salt and pepper to your liking

    While the stock is reducing cook the pasta to the packet instructions

  5. 5

    Add the cooked pasta, tarragon and the greek yogurt or cream to the chicken mix and keep stirring for 30 seconds. Remove the pan from the heat and serve with the cooked pasta
