If there’s one classic summer dish in our traditional cuisine, it’s gazpacho—and Andalusia is the home of gazpacho. Andalusian gazpacho is a simple, refreshing cold soup made with ripe tomatoes, green bell pepper, cucumber, and good extra virgin olive oil.
Cooking Instructions

Wash the tomatoes and green bell pepper thoroughly, then cut them into pieces.

Peel the cucumber and garlic clove, then chop them. Place all the chopped vegetables in a blender jar.

Add salt and a generous splash of vinegar, then blend on high speed until everything is well pureed.

Pour in a generous amount of extra virgin olive oil and blend again on a lower speed.

Add a little cold water or ice to make the gazpacho more liquid and smooth.

Transfer the gazpacho to a pitcher and adjust the texture, salt, and vinegar to your taste.

I love gazpacho. I've been experimenting to find the perfect balance of ingredients to suit my taste. I've made them slightly sour to enjoy even when you've lost your appetite on a hot summer day.You can go ahead and change the measurements to your liking. I do recommend, however, using only a small amount of the onion and garlic. I also like to squeeze some lemon onto this soup before serving.
