Ingredients

Serves 4 or 5 servings
  1. 2.2 lbsripe tomatoes (about 1 kg)
  2. 1small green bell pepper
  3. 1 clovegarlic
  4. 1/2cucumber
  5. Extra virgin olive oil
  6. Wine vinegar
  7. Salt
  8. 1 sprigfresh mint (optional)

Cooking Instructions

    Wash the tomatoes and green bell pepper thoroughly, then cut them into pieces.

    Peel the cucumber and garlic clove, then chop them. Place all the chopped vegetables in a blender jar.
