Ingredients

6 cups
  1. 3 TBSPbutter
  2. 1 1/2 poundsfrozen corn
  3. 1red onion diced
  4. 1jalapeño seaded and diced
  5. 2 TBSPminced garlic
  6. 1 1/2 TBSPcilantro
  7. 1/2 TSPhot chili powder
  8. 1/4 cupsour cream
  9. 1/2 TSPSriracha sauce
  10. 1 TBSPlime juice
  11. 1/2 TSPkosher salt
  12. 5 ozcotija cheese crumbled

Cooking Instructions

    Melt butter in a large saute pan over medium high heat.

    Add in corn stirring occasionally untill golden brown and caramelized around 10 minutes.

    Remove from heat. Put corn in a large mixing bowl. Add rest of the ingredients EXCEPT the cotija cheese. Mix well.

    Add in the cotija cheese and mix well before serving.

  5. 5

    Enjoy!
