Ingredients

  1. 1White Onion, diced
  2. 28 oz.Canned Diced Tomatoes (Fire Roasted are the best!)
  3. 6 oz.Canned Diced Green Chilies
  4. 1 3/4Roasted Red Bell Pepper
  5. 2 cupsChicken Broth
  6. 1 tspGarlic, minced
  7. 3 TbspChili Powder
  8. 2 tspGround Cumin
  9. 1 tspDried Oregano
  10. 1/2 tspSalt
  11. 1/4 tspBlack Pepper
  12. 32-48 oz.Ground Beef, frozen
  13. 12 oz.Wide Egg Noodles
  14. Shredded Cheese, Mexican Blend (Cheddar, Oaxaca, & Asadero)

Cooking Instructions

40 minutes
  1. 1

    Add onion, diced tomatoes, diced green chilies, roasted red bell pepper, chicken broth, minced garlic, chili powder, ground cumin, dried oregano, salt, and ground black pepper to the Instant Pot.

    Stir until combined.

  3. 3

    Put trivet into pot and place frozen ground beef atop it.

  4. 4

    Close & lock the lid, turning the steam release handle to seal the valve.

  5. 5

    Press PRESSURE COOK—Normal; Pressure Level: High; Time: 15 minutes

  6. 6

    Push steam release handle down for Quick Release.

  7. 7

    Break up ground beef & remove trivet.

  8. 8

    Add egg noodles to the pot.

  9. 9

    Press PRESSURE COOK—Normal; Pressure Level: High; Time: 4 minutes

  10. 10

    Press Cancel (Keep Warm: On)

  11. 11

    Stir well.

  12. 12

    Serve hot topped with Mexican blend shredded cheeses.
