You can use ricotta or cottage cheese or a mixture of both, but use the highest fat content you can find of whichever you choose. You can also use parmesan or Asiago or a mixture of both, but use the blocks not the preshredded kind to ensure it melts properly.

Ingredients

  1. 15 ozcontainer of Ricotta (whole milk) or Cottage Cheese (4%)
  2. 5 ozblock Parmesan or Asiago Cheese (grated)
  3. 1large Egg
  4. 1/2 bunchfresh Parsley (chopped)
  5. to tasteSalt & Pepper

Cooking Instructions

    Combine and mix all ingredients well.

    (optional) You can increase this recipe as much as you like and make both stuffed shells and lasagna or double of each and store in freezer.
