Chop the vegetables (potatoes, carrots, chayote, zucchini).

Place the ground meat in a large bowl. Add the two eggs, chopped cilantro, finely diced onion, and minced garlic. Season with a little oregano, salt, pepper, and a pinch of cumin. Mix everything together well.

Shape the mixture into meatballs.

Blend the 4 tomatoes with a little water, then pour into a pot and heat with more water. Once hot, add the meatballs to cook, along with the chipotle peppers. Season with a little chicken bouillon.

Once the meatballs are cooked, gradually add the potatoes, chayote, and finally the carrots and zucchini. Let everything cook until tender, then serve!
