Finely chop the onions in a food processor, then squeeze out the excess water. Add the onions to the ground beef along with the rest of the ingredients. Add breadcrumbs last, only if needed, depending on the texture of the kofta mixture.

Let the mixture rest in the refrigerator for 10 minutes to firm up. Shape the mixture into kofta logs and return them to the refrigerator until ready to cook.

Heat a grill pan and brush it with oil. Place the kofta pieces on the pan. Mix some of the onion water with a pinch of salt and black pepper, then use a brush to baste the kofta. Turn the kofta to the other side, baste again, and cook, turning occasionally, until fully cooked.
