Enchilada Stuffed Peppers

Ingredients

  1. 1/2 lbground beef
  2. 1/2small onion, diced
  3. Shredded carrot
  4. Baby spinach
  5. 2 cupsenchilada sauce
  6. 1 cupshredded cheese

Cooking Instructions

    Preheat oven 350

  2. 2

    In large skillet, cook beef with onions

  3. 3

    Add carrots and cook til soft

  4. 4

    Add spinach and sauce

  5. 5

    Cut peppers in half lengthwise. Remove stem, seeds and membranes

  6. 6

    Spoon a little beef filling into bottom of an 8x8 baking pan

  7. 7

    Place peppers in baking dish

  8. 8

    Spoon filling into each pepper

  9. 9

    If any filling remains, pour over top

  10. 10

    Cover with foil and bake 45 minutes or until peppers are soft

  11. 11

    Remove foil, add cheese and return to oven

  12. 12

    Cook until cheese is melted

  13. 13

    Serve with Mexican rice and beans
