Ingredients

20-25 minutes
12 servings
  1. 16 ozcream cheese
  2. 1/2 cupsugar substitute. I used all natural erythritol
  3. 2eggs
  4. 1/4 tspxanthan gum
  5. 1/2 tspvanilla
  6. 1/2 cupblueberries
  7. 1/4 cupsliced almonds

Cooking Instructions

20-25 minutes

    Preheat oven to 350 degrees.

    In a mixing bowl and using a mixer, beat cream cheese until smooth and creamy

  3. 3

    Add the sugar substitute, eggs, xanthan gum and vanilla. Mix until smooth

  4. 4

    Fold in blueberries and almonds

  5. 5

    Using nonstick 12 muffin tin, spoon in the batter. I used 2 tablespoons per muffin tin.

    Bake for 20-25 minutes, until top gets slightly brown.

    Best served chilled.
