Boil the eggs. Place the eggs in water, and bring to a boil. Continue boiling for about 13 minutes.
- 2
Break the boiled eggs into pieces.
- 3
Heat oil in a frying pan, add the thinly sliced onion, and saute until it becomes soft and wilted. Turn off the heat, and let it cool.
- 4
Add the Step 3 onion to Step 2, and season with the mayonnaise, salt and pepper.
- 5
Place a small amount of the mixture from Step 4 on a spring roll wrapper.
- 6
Roll it up in the same way as when you make spring rolls. Use katakuriko to secure the ends.
- 7
Deep-fry in heated oil at 180℃ until golden brown.
- 8
Transfer to a tray, and drain excess oil.
- 9
Serve on a plate and enjoy while they are still hot. Since they are already flavoured, you can eat them as they are.

Fresh Spring Rolls Fresh Spring Rolls
I love fresh spring rolls, so I make them with ingredients that we always have at my house. Using boiled eggs or shrimp turns them into colourful and gorgeous fresh spring rolls. This time I used canned young (mini) corn, but crab-flavoured kamaboko and okra taste delicious and also look beautiful when the spring rolls are sliced in half. It's quicker to rehydrate the rice paper wrappers in hot water, but if they get too soft, they are hard to handle. So I think it's better to rehydrate them in cold water until you get the hang of it to avoid mistakes. If the rice paper wrappers are still too stiff to roll, wait a little until the moisture from the ingredients soften them. They will soon be soft enough to use. For 10 rolls. Crispy Basic Spring Rolls Crispy Basic Spring Rolls
These are the spring rolls that I've been making for a long time now. They taste great filled with harusame noodles too.If the fillings have too much water content then the spring roll wrappers will tear easily and the oil will spit more, so please soak up any excess moisture with katakuriko. If you wrap the fillings while they're still too hot, the spring roll wrappers could get damaged so please make sure to let them cool sufficiently. Recipe by Yuuyuu0221 cookpad.japan -

Simple Non-Fried Toasted Spring Rolls Simple Non-Fried Toasted Spring Rolls
When eating out I've had both spring rolls with cream cheese and spring rolls with edamame, so I decided to see what would happen if I combined them Then I added some of my favourite mentaiko and cooked them in the oven (since I couldn't be bothered with frying them). They came out really well and everyone loved them! Now I have these all the time. You can add more edamame if you'd like, but if you add in 4, they're spaced out just enough so that you get a bean with each bite. Fresh Spring Rolls with Shrimp Fresh Spring Rolls with Shrimp
I love fresh spring rolls, but they are rather expensive to buy readymade, so I made my own. I can't remember the shock I felt when I tried shiso leaves in them...it was a great match. Since then I've always used shiso leaves in these. The shiso leaves make a big difference, so I definitely recommending including them. The other vegetables can be anything you like. Try out your favorites. You can use canned tuna or ham etc. instead of the shrimp. The last important part of the recipe is the rolling. Just try it several times to get a feel for it. For 7 rolls. Tender on the inside, crunchy and delicious on the outside. It is a bit of a step, but I make a large batch and freeze the leftovers to have as a side dish for the next dinner. It's also a hit at home parties!#Japanesefood #Japanesecuisine #washoku #CA2025 Yuki Ohtani -
