First of all take a medium size eggplant and roast on a gas flame and mashed it

Heat 1 tablespoon musterd oil in a kadahi and add all chopped ingredients ginger,garlic,onion and green chillies

Saute for 2 minutes until it get soft

Now add chopped tomatoes cover with lid and cook for five minutes until tomatoes get soft
- 5
Mix well and cook for two minutes than add salt
- 6
Add haldi powder,red chilli powder mix well cook for one minute
- 7
Than add roasted & mashed eggplant and mix well cook for one minute now add coriander leaves
- 8
Mix well and off the gas. Now serve it with roties, fulkies or parathas. please try it at once.It is very tasty
