Boil eggs

After cooked, throw away the egg shell

Split the egg, then put the egg whites and yolk to separate bowl

Mash the egg yolk using a fork or whisk

Cut the egg whites into smaller pieces and mash it as small as possible using a fork or whisk

Mix the egg whites and yolk

Add good amount of mayo (depends on preference, but i prefer about 2 tablespoon) to the egg mix

Add a pinch or two of salt, then mix it until even and soft texture

Spread the mix to the bread, then cut it diagonally

Your tamago sandwich is ready, enjoy!

Our family's style is to make these with demi-glace sauce instead of ketchup.I always feel like making this sandwich the day after we eat Western-style burgers with demi-glace sauce.This is very easy and delicious. I really recommend it!This sandwich has a better texture and is easier to load with fillings when it's toasted so that it's crispy on the outside but still fluffy on the inside.
