Sabudana Mango Pudding

Fresh and refreshing dessert for summers. Addition of sabudana, soaked basil seeds, dry fruits to mango pudding gives a nice texture to the pudding and also makes it more creamy.

Sabudana Mango Pudding
Fresh and refreshing dessert for summers. Addition of sabudana, soaked basil seeds, dry fruits to mango pudding gives a nice texture to the pudding and also makes it more creamy.

Steps

In a pan add milk and bring it to 2-3 boils. Don't reduce the milk. Add the soaked sabudana and cook till they turn translucent/completely cooked. Stir continuously while cooking the sabudana

Add cardamom powder,sugar and dry fruits. Cook till the sugar dissolves completely and the mixture turne a bit thick (kheer texture)

Cool down the sabudana mixture completely. Add mango pulp to the mixture and mix very well. Add chopped mangoes and fruit cocktail. Mix well

Refrigerator for 1-2 hours before serving. Soak the sabza/basil seeds 30 minutes before you plan to serve the dessert

In a bowl, add sabza seeds, add the prepared dessert, top with some more sabza seeds, tutti frutti and garnish with mint leaves.

Serve chilled. Enjoy
