Growing up & being raised #Sicilian 🇮🇹#Italian we ate ALOT of pasta! 👌🤣 But we were poor and never could really afford to do the "stuffed pastas." 🤔 Every once in a while we had lasagna but that was about it 🙅🏻‍♀️ and only about 4 times a year! 🤦🏻‍♀️😆 Dont get me wrong, I love average "spaghetti" enough, sure... 🤷🏻‍♀️ but I realized long ago that MY personal One True Love, lied with #stuffedpastas & #filledpastas FOR SURE! 😍🤤😍 Seriously. #ravioli #tortellini #manicotti #stuffedshells #MyItalian

Ingredients

  1. 1 boxmanicotti shells
  2. 2-4 TbspCooking oil
  3. 1small bag fresh spinach leaves
  4. 2medium yellow onion, diced
  5. 1large can spaghetti sauce, your preferred brand
  6. 1large egg
  7. 1small red pepper, finely chopped
  8. 5green onion, finely chopped
  9. 3 cupsshredded mozzarella cheese
  10. 1 (32 oz)container ricotta cheese
  11. 2/3 cupgrated parmesan
  12. 1 tspSalt
  13. 1 tspPepper
  14. 1 tspGarlic powder
  15. 1 cupshredded cheddar & Monterey mix

Cooking Instructions

    Preheat oven to 425°. Begin by boiling water & cooking your manicotti noodles. Drain. Set aside. (*Tip- Lightly coat noodles in olive oil and toss, in order to avoid sticking together and ripping apart later.🤷🏻‍♀️)

    Next, saute your spinach and yellow onion with cooking oil until slightly softened. (*Tip- Add a pinch of the spices here for some magic!🤩)

    When ready, combine spinach, onions, egg, mozzarella & parmesan cheese, & spices in a large mixing bowl and mix well. Also coat the bottom of your baking/casserole dishes with a thin layer of your favorite spaghetti sauce!

    After that, stuff each shell generously with mixture and place in rows and/or columns inside casserole/baking dishes.

    Finally, cover stuffed pasta rolls with remaining spaghetti sauce & top with shredded Cheddar & Monterey cheese.

    Cover with foil & Bake for 45-60mins or until cheese is melted nicely and rolls are hot all the way through.🤠👌👍 Serve & Enjoy!
