Jaja Bantal (Indonesian Dessert)

Jaja means "snack" in Balinese. Most Balinese snacks have coconut, coconut milk, or sugar mixed into glutinous mochi rice or rice flour to steam or boil. Jaja bantal is a specialty that's served as a snack, in meals, or even for celebrations. Authentically, they are made by steaming in a young coconut leaf. They're so tropical!
-There's no need to cover the container with a plastic wrap when microwaving the yukari.
-Make sure to wrap in two layers of plastic wrap.
-Steam until the portions feel soft when you press on them with your hands.

Cooking Instructions

Mix the yukari with the [A] ingredients, and microwave for 40 seconds (without covering in plastic wrap). Soak the mochi rice in yukari water overnight.

Drain the mochi rice in a sieve.

Combine with the coconut and sugar, and mix everything together.

Scoop out 2 tablespoons of the rice mixture onto a sheet of plastic wrap, and wrap it in plastic wrap.

Wrap the rice from Step 4 with another sheet of plastic wrap to make a second layer.

Secure by twisting the open ends.

Repeat to make 5-6 wrapped portions.

Put into a boiling steamer and steam for 20-25 minutes over medium heat until they feel soft when pressed down with your hands.

Remove plastic wrap and serve the amount you want to eat. Done!
