Philly cheese steak stuffed peppers

I was the benefactor of a wrong grocery order, once it leaves their vehicle they can’t take it back. I had to come up with some ways to use these items. I foresee some other person getting the TV dinners and frozen fish sticks.

Ingredients

30 minutes
2-4 servings
  1. 4medium sized bell peppers (color is your choice)
  2. 1medium onion chopped
  3. 1small jar of mushrooms
  4. 1-2 clovesgarlic minced
  5. 1/2 tablespoonItalian seasoning
  6. 1/2 teaspoongarlic powder
  7. 1/2 lbdeli thin sliced roast beef sliced into thin strips
  8. 2 tablespoonsbutter
  9. 8Provolone cheese slices
  10. 4 slicesPepper jack cheese cubed

Cooking Instructions

30 minutes

    Heat oven to 350 degrees Fahrenheit.Wash peppers, cut lengthwise in half or cut top off. Remove seeds and membrane.

    Take slice of provolone and fit in each pepper, toss in a few cubes pepper jack in each pepper.

    Place peppers in baking dish.

    Melt butter in skillet, add onions and sauté til soft.

  5. 5

    Add garlic, Italian seasoning, garlic powder and cook for additional 1-2 minutes.

    Add jar of mushrooms and continue heating.

  7. 7

    Add roast beef strips to mixture and heat till warmed.

  8. 8

    Stuff peppers with mixture.

  9. 9

    Add remaining provolone slices to top of peppers.

    Spray a piece of foil with nonstick spay and cover baking dish. Bake for 30 minutes or until peppers are soft and stuffing is heated. Remove foil last 5 minutes to brown.
