Ingredients

  1. 2long eggplants
  2. 1 candiced tomato
  3. 4garlic cloves
  4. 1/4green onion
  5. 1/4 cupdried red pepper
  6. 2 tbspoil
  7. 2 tbspsoy sauce
  8. 1 tspsugar
  9. 1 tspvinegar

Cooking Instructions

30 minutes
  1. 1

    Preheat oven to 350°F.

    Cut eggplants into finger-long strips. Place them on a baking sheet and bake for 10 minutes.

    Mince the garlic. Cut the green onion to small circles.

  4. 4

    Heat up a pan on medium high heat and add oil. Then add garlic, green onion and dried red pepper.

  5. 5

    When the garlic starts turning golden brown, add diced tomato, soy sauce, sugar and vinegar, and continue cooking to boil.

    Add baked eggplant and continue cooking on medium heat for 8-10 minutes.

  7. 7

    Delicious Eggplant Stew ready to serve!
