Ingredients

Serves 6-8 servings
  1. 1 lb (2 oz)hydrated and squeezed soy protein (500 grams)
  2. 1 lb (2 oz)chorizo, optional (500 grams)
  3. 8dried chilacate chiles, soaked
  4. 2garlic cloves
  5. 6whole allspice berries
  6. 6-8bay leaves
  7. 1 pieceonion
  8. 1 pinchcumin
  9. 3 tablespoonschicken bouillon or seasoning (such as Knorr)
  10. Salt, to taste
  11. For serving
  12. As needed, warm corn tortillas
  13. Pineapple chunks, to taste
  14. Hot sauce, to taste
  15. Chopped onion and cilantro, to taste
  16. Limes, to taste
  17. As needed, avocado or guacamole
  18. Beans, to taste

    Hydrate and drain the soy protein. (See my recipe for how to hydrate soy so it tastes great.)

    I used a piece of longaniza sausage for extra flavor, but you can leave it out for a fully vegan version. Crumble it well.

    Gather all your ingredients so they're ready to use.

    Add all the dry ingredients to a blender. Blend well with 1 cup of water (about 240 ml), or use chicken or beef broth for more nutrition and flavor.

    Heat a little oil in a pan. Sauté the chorizo until browned and it releases its fat, then lightly sauté the soy protein and green chiles or chilaca chiles as desired.

    Add sliced onion to taste, sauté, then add the contents of the blender.
