Potol or Parwal is one of my favorite vegetables. My Late Mom would make a recipe where she would make a paste of Potol with shrimps, chilies, poppy seeds. Cook on a low flame in oil and make a mash after cooling. I still remember the aroma that the recipe had and one can eat either on its own or with steamed rice.

Cook on a low flame in oil and make a mash after cooling. I still remember the aroma that the recipe had and one can eat either on its own or with steamed rice.

Wash the Potol. Scrape the skin. Cut into small pieces and remove the seeds. Wash the shrimp and devein. Grate the coconut. Chop the green chilies fine. Chop the garlic

In a blender add all ingredients except oil, red chili powder, cumin powder, salt. Blend to a paste

In a wok heat mustard oil and add the paste. Stir on low flame for 2-3 mins.

Add red chili powder, cumin powder, salt and mix well continuously in low flame. The mix would come off the sides and not stick to the wok. That’s when it’s ready. Set aside

Plate with chilies and enjoy with steamed rice
