Chick Pea Salad

Ingredients

  1. 1-1 1/2 cupschick peas
  2. 1lemon
  3. 2 tablespoonsOlive Oil
  4. 2red peppers
  5. 14 ouncespitted black olives
  6. 2Bouquets Parsley
  7. 1cucumber
  8. 2red onions
  9. salt

Cooking Instructions

  1. 1

    Soak dried chick peas overnight. In a pressure cooker, steam for 30 minutes. remove and let cool in fridge for 1 hour

  2. 2

    Squeeze lemon and mix with olive oil in a large bowl

  3. 3

    Chop peppers, cucumber, olives, onions and parsley, tossing into lemon-oil

  4. 4

    Add Chick peas

  5. 5

    Heavily salt

  6. 6

    Let chill in fridge for 1-2 hours
