Chicken Satay with Peanut Sauce

  1. 2.2 lbschicken breast
  2. 1/2 tablespooncoriander seeds
  3. 1/2 tablespooncumin seeds
  4. 1 tablespooncurry powder
  5. 1 tablespoonturmeric powder
  6. 1 teaspoonsalt
  7. 1 pinchground black pepper
  8. 2 tablespoonsgrated ginger
  9. Zest of one lemon
  10. 2 tablespoonsfish sauce
  11. 1/2 cupcoconut milk (about 100 ml)

    Ingredients

    Toast the coriander and cumin in a pan. Once they start to smell fragrant, remove them and grind into a fine powder using a mortar and pestle.

    Cut the chicken into 1-inch cubes and place in a bowl.

    Add the previously prepared coriander and cumin. Also add the curry powder, turmeric, salt, pepper, ginger, lemon zest, fish sauce, and coconut milk. Mix well and let marinate overnight, or for at least 1 hour.

    Remove and thread onto skewers.

    Cook on a grill or griddle on both sides and serve with satay sauce.
