Ingredients

  1. 6 tbspolive oil
  2. 2onions chopped
  3. 8gloves garlic minced
  4. 1 lbspinach
  5. 1/4 cupfresh dill
  6. 4scallions chopped
  7. 2 cupsshort grain white rice
  8. 2 cupschicken stock
  9. Salt
  10. Pepper
  11. Juice of 1 lemon
  12. 2 tbspbutter
  13. Feta cheese to top

Cooking Instructions

    Add 3 tbsp olive oil to instant pot on sauté function

  2. 2

    Add 1 onion and 4 gloves garlic and sauté until onions are translucent

  3. 3

    Add spinach and sauté until wilted. Add salt and pepper to taste and then remove spinach from instant pot and set aside

  4. 4

    Heat remaining 3 tbsp of olive oil in instant pot. Add remaining onion and garlic and sauté until onions are translucent

    Add half the dill and half the scallion to onions and garlic. Add rice and chicken stock

  6. 6

    Cook on high pressure for 4 minutes then let it natural release for at least 10 minutes

    Add spinach, lemon juice, remaining dill and scallion, and butter to rice. Stir to combine

  8. 8

    Top with feta when serving and enjoy!
