Cooking Instructions

Trim excess fat off pork belly and cut into 1.5" cubes

Liberally coat pork belly bites in seasoning.

Preheat Sous Vide for 177, and vacuum seal pork belly bites in Sous Vide safe bags

Sous Vide pork Belly Bites for 14 hours

Remove Pork Belly from bags and drain excess juices into bowl.

Line pork belly in an aluminum pan or cast iron pan, and coat with a few spoon fulls of juice from Sous-vide bag.

Pour over Asian Hot Sauce(recipe separate) over pork belly.

Smoke pork belly at 225 degrees until internal temperature hits 205.

Fork into steamed pork belly bun and enjoy!
