Ingredients

  1. 700 gramspork shoulder
  2. 700 gramsbeef chuck
  3. 1 teaspooncumin
  4. 6green cardamom
  5. 2cloves
  6. 1/2 teaspooncinnamon
  7. 1 teaspoongarlic powder
  8. 3 tablespoonsfresh Dill
  9. 10-12fresh mint leaves
  10. 3 tablespoonsfresh cilantro
  11. 2shallots
  12. 2 clovesgarlic
  13. 2 tablespoonswalnuts
  14. 2 tablespoonspine nuts
  15. 2eggs
  16. 1 cuppanko
  17. 1 cupmilk
  18. 2% salt by weight of meat

Cooking Instructions

    Cut pork and beef into cubes

  2. 2

    Combine and grind spices, rub onto meat and let marinate for 4 hours

  3. 3

    Finely chop herbs

  4. 4

    Finely mince shallots and garlic

  5. 5

    Toast and chop nuts

  6. 6

    Combine panko, milk and salt

  7. 7

    Grind meat, then add all other ingredients, tossing gently but well combined.

    Light grill, medium high

    Mount meat mixture on skewers or form into Kofta logs about 1.25 inches in diameter by 4 inches long, and place into a lightly greased BBQ wire rack.

    Grill on medium high, turning occasionally until thermometer reads 160

  11. 11

    Serve with yogurt and garlic sauce.
