Preheat oven to 350°F.

Slice the pumpkin and put then in a large container. Microwave for 3 minutes. Drain the extra water after microwaving.

Slice the mushroom.

Heat up a pan and add oil. Add mushroom and cook on medium heat till mushroom starts to shrink. Add spinach and cook till spinach shrinks.

Beat the eggs.

Add the spinach and mushroom on top of pumpkin slices. Pour the egg evenly on them. Sprinkle shredded cheese on top.

Bake in oven for 20 minutes and broil for 2 minutes.
