Preheat an oven to 200 ℃ / 392 F. Chop almonds. Use a frying pan to dry roast the chopped almonds on low heat for 3-4 mins. Transfer to a tray lined with parchment paper to cool. Sift flour; set aside.
- 3
Cream unsalted butter until smooth. Add granulated sugar in 3 parts, mix well each time. Mix it with an electric mixer on low speed for 3 mins until whitish.
- 4
Add beaten egg in 3 parts, mix well on low speed until smooth each time. Add vanilla oil and mix well.
- 5
Add ground almonds, mix well while crushing lumps to make it smooth.
- 6
Add the flour at once. Fold it until large lumps form.
- 7
Gather the dough to the center. Use a spatula to press and spread the dough to stick it to the inside of the bowl. Repeat it two more times. It should get smooth.
- 8
Add half of the chopped almonds, fold roughly. Put some oil on your palms, roll the dough into about 3.5 cm / 1.4 inches balls and place them slightly apart from each other on a baking sheet. It's about 15 pieces.
- 9
Use your fingers to flatten each lightly. Roll each in the remaining almonds to coat the surface and sides. Turn down the oven to 180℃/ 356 F and bake for 17 mins until golden brown.
- 10
Leave the cookies on a cooling rack for around 15 mins before serving. Thank you!

Crunchy Nuts Almond Snowball Cookies Crunchy Nuts Almond Snowball Cookies
I love snowball cookies with almonds inside, and so the amount of almonds I added to the cookie gradually escalated. I finally reached a point where the almonds wouldn't fit anymore. The slight sweetness of the powdered sugar and almonds tastes delicious. There are a lot of almonds mixed in so the dough is prone to crumbling while shaping. Squeeze the dough tightly with your fingers. The salt content of the butter differs depending on the brand, so whenever you use salted butter, and also when you think the almonds taste too salty, wipe off the salt with a kitchen towel. Crispy and Melt-in-your-mouth Almond Cookies Crispy and Melt-in-your-mouth Almond Cookies
This cookie is good for a gift or taking to a party. I made this recipe because I bought the cookie cutter I had my eye on for while. I usually keep extra egg white in the refrigerator and make financierslater.Don't take too much time to mix and knead the dough through Steps 1-4. Mixing and kneading in a short time makes the cookie crispy and melting. I recommend to make icebox cookies from the remaining dough after cutting out with a cookie cutter, because you don't waste any dough and you will enjoy different shapes of cookies. I wanted to use almond flour to make cookies for my daughter. If you set the toaster to 13 minutes and start the clock from there, by the time you have finished positioning the dough on the baking tray, there will be about 11 minutes left to bake and the toaster will be pre-heated as well. The baking time depends on the thickness of you cookies, so adjust accordingly. For about 20 (1 small baking tray's worth). Recipe by Momonga mammy cookpad.japan -
