Ingredients

  1. 2white fish fillets (haddock, basa, cod etc)
  2. 1red onion
  3. 1small piece ginger
  4. 2garlic cloves
  5. 1red chilli
  6. 1 tspturmeric
  7. 1 tbspcurry powder
  8. 1veg stock cube
  9. 1 tbsptomato paste
  10. 1/2 cupcoconut milk or cream
  11. 100 gbaby leaf spinach or kale
  12. 150 grice
  13. Handfulcoriander

Cooking Instructions

    Start cooking the rice

    Finely chop the red onion, garlic, ginger and chilli (deseed first)

  3. 3

    In a hot pan sweat the onion, ginger and garlic for a couple mins

  4. 4

    Stir in the curry powder and turmeric

  5. 5

    Then add the chilli (save a pinch for garnish) and tomato paste

  6. 6

    Mix the coconut milk and veg stock in a mug and add boiling water. Add to the pan and start to reduce

    Once reduced add the spinach and wilt into the sauce

  8. 8

    Cut the fish into bite size pieces and add to the pan. You can either cover the lid and steam or stir in. The fish is ready when it becomes opaque and flaky

    Once the ride is ready finely chop some coriander and stir in

  10. 10

    Serve! I like to add the rice to a bowl and turn onto a plate to make a dome.

Made this recipe as directed except I used frozen spinach. Enjoyed the result. Easy and it works. I shall now be trying more recipes from Mr Pantelides.
