With Chicken Breast Teriyaki Hamburger Steaks (Tsukune Patties)

I created this dish because I wanted to knead shio-koji (which has come back into fashion) into hamburger steaks.
I also wanted to make inexpensive and healthy chicken hamburger steaks with teriyaki sauce, a favorite with kids!
They turned out to be fluffy and delicious.

I made minced meat with chicken breasts, including the skin.
You can also use store-bought minced chicken. Recipe by Yusase mama

Ingredients

4 servings
  1. 500 gramsChicken breasts
  2. 1/2 mediumOnion
  3. 1/4Carrot
  4. 1/2 tbsp★Shio-koji (salt-fermented rice malt)
  5. 3 tbsp★Katakuriko
  6. 1 tbsp★Sake
  7. 1 tsp★Soy sauce
  8. 1 dash★Salt and pepper
  9. For teriyaki sauce:
  10. 5 tbspSoy sauce
  11. 3 tbspMirin
  12. 3 tbspSugar
  13. 2 tbspSake

Cooking Instructions

    Mince the chicken breasts, onion, and carrot in a food processor. If you don't have a food processing machine, mince with a knife.

    Add the ingredients from Step 1 and the ★ seasoning ingredients into a bowl, and mix well.

  3. 3

    Shape into thin and slightly smaller-sized hamburger steaks than normal. Lightly grease a frying pan, and fry both sides until golden brown.

    Cover with a lid, and steam-fry for about 5 minutes.

    Remove the lid, swirl in the teriyaki sauce mixture, and simmer until the sauce is thickened, then done.
