Celeriac and Bramley apple soup

There’s a sweetness to this delicious soup that I originally thought was coming from the apple but no, it was the celeriac. Such a delicious and unrated vegetable in my opinion. I cooked it as a starter before a roast dinner at my parents house. Dad was initially sceptical but after tasting it, admitted it was delicious. If you give it a go, I’d recommend using homemade chicken stock if possible (my saint of a mum always has a supply in her freezer) and provided you eat meat, the smoked pancetta is a must! It acts like an additional seasoning! If you don’t do meat, anything smoked and crunchy would work I’m sure.

Ingredients

1hr 30 mins

  • 1large celeriac - peeled and chopped into large chunks
  • 1Bramley apple - cored and chopped into chunks
  • 2 clovesgarlic - crushed or finely chopped
  • 1onion - finely chopped
  • 1/2 tbspfresh thyme leaves
  • 1 stickcelery - finely chopped
  • 1 tspfresh sage leaves finely chopped
  • 1 litrechicken stock (ideally homemade)
  • 60 gsmoked pancetta
  • Splashcream (optional)

Steps

    Preheat the oven to 170 degrees C (fan). Put the celeriac on a roasting tray. Coat with oil and season with salt and pepper for 50 minutes until soft and golden.

    Heat a tbsp olive oil in a saucepan over a medium heat. Add the onion, celery, garlic and apple. Fry until it starts to soften. Then add the thyme and fry for another minute.

    Add the celeriac, sage and chicken stock to the pan. Bring to the boil and then simmer for 30 minutes.

    Remove from the heat and blitz until smooth with a stick blender.

    Quickly fry off the pancetta in a small pan over a medium high heat until crispy. Then remove from the heat and finely chop.

    Serve the soup with a splash of cream (I had leftover whipping cream to use up but any would do) and a sprinkling of pancetta.
