Ingredients

  1. 1 1/4 lbsred potatoes cut into 3/4 chunks
  2. 2 tspolive oil
  3. 15 ozcan chickpeas rinsed and drained
  4. 1 tspliquid smoke
  5. 1/2 cupthinly sliced red onion
  6. 1/2 cupcucumbers cut into half moons
  7. 12 ozRomaine Lettuce chopped
  8. Handfularugula
  9. 2 tbspnutritional yeast
  10. 2 tbsptamari

Cooking Instructions

    Cook potatoes until tender then place in fridge until they stop steaming

    Prepare the chickpeas by preheating a large pan over medium heat and add oil. Saute the chickpeas for about 5 minutes until browned, turn off the heat. Drizzle in tamari and liquid smoke and roll the chickpeas to coat.

    Mix the onion, cucumbers, and Lettuce in a large bowl with dressing and nutritional yeast. Once potatoes and chickpeas are cooled add them in. 2tbsp
