Ingredients

  1. Chicken marinade
  2. 4chicken breasts
  3. 3 tbsPlain yoghurt
  4. 1/2 tbsginger paste
  5. 1/2 tbsgarlic paste
  6. 1/4 tspground turmeric
  7. 1 tspgaram masala
  8. 1 tspred chilli powder
  9. 1/2 tspsalt
  10. To sauté and blend
  11. 1.5 tbsghee or oil
  12. 1large sliced onion
  13. 3Green cardamoms
  14. 6cashews
  15. 4almonds
  16. 4 tbsplain yoghurt
  17. Chicken korma gravy
  18. 1 tbsghee or oil
  19. 1Bay leaf
  20. 4cloves
  21. 1cardamon
  22. 2 inchcassia (cinnamon)
  23. 2Green chillies
  24. 125 mlwater (more if needed)
  25. 1/4 tspsalt
  26. 3/4 tspgaram masala
  27. 1.5 tspcoriander powder
  28. 1/4 tspchilli powder
  29. Garnish
  30. Chopped fresh coriander

Steps

    To a bowl add in your diced chicken

  2. 2

    To the bowl add your marinade, yoghurt, ginger paste, garlic paste, ground turmeric, garam masala, chilli powder and salt

  3. 3

    Mix well and let it marinade for at least 30mins(I prefer overnight)

  4. 4

    To a pan melt in 2tbs of ghee

  5. 5

    Add in 3 lightly bashed cardamon pods and your sliced onion

  6. 6

    Cook until the onion is golden and caramelised

  7. 7

    Remove from heat and add in your cashews and almonds

  8. 8

    Allow to cool completely

  9. 9

    Once cooled blend until a smooth sauce base is formed adding water if necessary

  10. 10

    Using the same pan heat 1tbs of ghee

  11. 11

    Add in your whole spices, bay leaves, cassia, cloves and cardamon

  12. 12

    Add in your chicken and the slit green chillies

  13. 13

    Sauté on medium heat until the smell of raw ginger dissipates(about 5 to 7 mins)

  14. 14

    Add in your onion paste and 125ml of water, mix well

  15. 15

    Add in your salt, garam masala, coriander powder and chilli powder

  16. 16

    Mix well, cover and cook on medium heat until the chicken is tender and cooked through

  17. 17

    Taste and add more salt if needed

  18. 18

    If the korma is too thick add some hot water to loosen the consistency

  19. 19

    Sprinkle some coriander leaves as garnish

  20. 20

    Serve with rice or naan and enjoy
