To a bowl add in your diced chicken

To the bowl add your marinade, yoghurt, ginger paste, garlic paste, ground turmeric, garam masala, chilli powder and salt

Mix well and let it marinade for at least 30mins(I prefer overnight)

To a pan melt in 2tbs of ghee

Add in 3 lightly bashed cardamon pods and your sliced onion

Cook until the onion is golden and caramelised

Remove from heat and add in your cashews and almonds

Allow to cool completely

Once cooled blend until a smooth sauce base is formed adding water if necessary

Using the same pan heat 1tbs of ghee

Add in your whole spices, bay leaves, cassia, cloves and cardamon

Add in your chicken and the slit green chillies

Sauté on medium heat until the smell of raw ginger dissipates(about 5 to 7 mins)

Add in your onion paste and 125ml of water, mix well

Add in your salt, garam masala, coriander powder and chilli powder

Mix well, cover and cook on medium heat until the chicken is tender and cooked through

Taste and add more salt if needed

If the korma is too thick add some hot water to loosen the consistency

Sprinkle some coriander leaves as garnish
- 20
Serve with rice or naan and enjoy
