    Remove the excess broth from the barbacoa, place it in a saucepan over medium heat until it dries out completely, then reduce the heat further.

    Meanwhile, crack the eggs into a bowl, beat them well, and pour the mixture over the meat.

    Stir constantly so the eggs cook evenly. Once everything is cooked, remove from heat. (For fluffier eggs, you can add a little milk or heavy cream)
