Leftover Rice Cutlet / patties

An interesting and a filling cutlet recipe made with leftover rice and veggies. it is indeed an excellent way to finish leftover rice where it transforms a bowl of boring rice to something exciting snack. it can be easily served as it is without any extra condiments, but taste when served with a spicy green chutney or even mayo sauce.

An interesting and a filling cutlet recipe made with leftover rice and veggies. it is indeed an excellent way to finish leftover rice where it transforms a bowl of boring rice to something exciting snack. it can be easily served as it is without any extra condiments, but taste when served with a spicy green chutney or even mayo sauce.

First, in a large bowl, add the cooked rice, knead it by hand and add the boiled mashed potatoes. Now add chopped onion, chopped capsicum, grated carrot, chopped green coriander leaves, ginger-garlic-green chilli paste and chili flakes.

Then add black pepper powder, black salt and corn flour and mix well.

Now add red chilly powder, turmeric powder, garam masala and salt to taste and mix well.

Then make a lemon-sized ball from the mixture made by greasing your hands with oil and press it to form a cutlet. Make all the cutlets this way.

Now heat the oil in a pan and arrange the cutlets in it as much as can fit in the pan and shallow fry on medium flame till both the sides are golden and crispy.

Now our very crispy and delicious left over rice cutlet is ready to serve. These cutlets are fun to eat with tea or coffee.
