This is the Jozwiak family’s favorite meal. Upon some research, i found it’s a common Polish chicken soup recipe called Rosół . Aunt Maria was kind enough to walk me through the steps. This is my interpretation of her recipe, however I rarely stick to the exact recipe… Shh don’t tell Ryan. There are many different ways to make this recipe your own!

Ingredients

3.5 hrs
6 servings
  1. Large pot that will fit a whole chicken
  2. 1whole chicken
  3. Water
  4. Salt
  5. 6-10Chicken bouillon cubes. This varies based on the amount of salt added to the water at the beginning
  6. 2Bay leaves
  7. 1Onion LARGE or 2 small
  8. 2All Spice pods
  9. Yellow food coloring
  10. Parsley (dried)
  11. Chives (dried)
  12. Cook noodles separately
  13. Small pot with salted water
  14. Fideo Noodles (very important)
  15. Possible add-ins: Celery, carrots, cream, rice, mushroom, lemon, or dumplings…. Just don’t tell Ryan. Apparently it’s basically a sin in the Jozwiak fam to put anything else in Memaw’s soup
  16. The Traditional Polish soup typically has the additions of sticks of Leeks, celery, and carrots, Parsley

Cooking Instructions

    Start with a *thawed* chicken. Rinse the chicken (apparently this is a crucial step. Chicken must be completely thawed and washed.)

    Place the rinsed chicken in the large pot and fill with water to cover the chicken. Add a big pinch of salt and bring to a soft SIMMER. Skim off grey foam/bits that float to the top every few mins (very important!) for about 15-30mins.

    Add the diced onion, chicken bouillon cubes, all spice pods, bay leaves, and black pepper. Let it simmer for about 45min-3hr.

    Once chicken wings/legs are almost falling off when you pick up the chicken, then it’s ready. Take the whole chicken out and set it aside to cool while you start the noodles. *If you choose to cook it longer than 2hrs for more flavor, just be prepared to strain the whole pot to get every tiny bone. and finish the broth. Cook noodles to package directions.

    Remove bay leaves and All Spice pods. Add the yellow food coloring, parsley, and chives. *Taste for salt level and adjust as needed.
    *Thicken to desired amour with a cornstarch slurry.

    Debone chicken, chop, and add it back to the pot.

    Rinse noodles with water (important!) and it’s ready to serve!
