I use this for multiple things! Taco filing, eggplant roll filling, fillings in roasted veggies like squash boats or stuffed peppers :)
Cooking Instructions

Bring 4 cups water to boil and add lentils. I used 3/4 C brown lentils and 1/4 C split bengal gram. (Did not have enough lentils...:/) Boil for 20 to 25 minutes. Check on it, do not want lentils to overcook. Once done, drain and set aside.

Heat oil in pan, then add diced onions. Cook till translucent. 7-10 minutes. I cooked a bit extra due to my son does not like the bite of onions that are not cooked well.

Then add you spices (chili powder, cumin, garlic powder, oregano, salt and pepper) stir into each other for a couple minutes. Till fragrant :)

Add lentils, nutritional yeast and water. Stir and let cook together for 3 to 5 minutes. Let liquid absorb:)

This recipe is modified from one I saw on Allrecipes.com. It turned out too runny to work well burrito style so I served it with tortilla chips and cheese quesadillas. Of course, you could serve it in taco shells with all the fixings, I just didn't have any on hand. I use the split red lentils from Trader Joe's because the cook time is so much faster, but you could use any kind of lentils you want just follow the cooking directions for the type you buy. I went deep outside the box tonight. It is of coarse taco tuesday but had no fresh meat ready. I do like to have vegetarian meals several times a week so I thought let's give this a try. I used lentils and spices as my meat substitute. We ate the whole thing! The lentils with added onions gave a look and texture of ground beef. I used spices while cooking the lentils to infuse flavor into them. Then used a boxed taco kit and the flavor packet to finish it off. Healthier and delicious. You really need to try this!
