Baked Salmon with Asparagus on a Bed of Creamed Spinach

Typically, creamed spinach is just that: spinach and cream, as the cream softens the sharp flavor of the spinach. In my case, I like to add a sauté of onion and garlic, which I believe not only adds healthy ingredients but also enhances the flavor.
Additionally, if we include some fresh salmon fillets baked with dill and some sautéed asparagus, we round out an easy, tasty, healthy recipe full of flavor. Perfect for a weekend when we want to enjoy the delicious taste of this rich fish.

Cooking Instructions

First, start with the fish. Once the salmon fillets are free of bones, season them with salt and pepper, and coat them with a layer of chopped dill to let the salmon absorb the flavor.

Next, after the salmon fillets have rested, place them in a baking dish previously greased with a little olive oil.

Bake in the oven at 400°F (200°C) for about 15 minutes. The goal is for them to be flavorful and golden brown.

Meanwhile, prepare the creamed spinach. In a pan with a little butter, sauté the chopped onion and garlic until the onion becomes translucent.

At this point, add the well-washed spinach and mix well to let it cook.

Once the spinach has lost all its water, add the crème fraîche (Greek yogurt or heavy cream) and adjust the salt, pepper, and nutmeg to taste.

Simultaneously, in another pan with a bit more butter and a small splash of olive oil, sauté the asparagus for about 10 minutes until tender, seasoning with a little salt to taste.

When plating, place a bit of creamed spinach as a bed on which the salmon fillets will rest, and on top of them, the asparagus. Additionally, you can also add a bit more crème fraîche or yogurt to taste and drizzle the asparagus and fish with a few drops of lemon.
