Ingredients

  1. 1 pack(5-6 pounds) chicken breast
  2. Olive oil
  3. 2onions, sliced
  4. 1red pepper, sliced
  5. 1green pepper, sliced
  6. 10 clovesgarlic, minced
  7. 1/8 teaspoonblack pepper
  8. 1/8 teaspooncrushed red pepper
  9. 1/4 teaspoonground cumin
  10. 1/2 cuptaco seasoning
  11. 1 can (15.5 ounce)Goya black beans, undrained
  12. 2 cans (10 ounce)diced tomatoes with green chilis
  13. 1/3 cupcold water
  14. Hot cooked white rice
  15. Broken pieces of tortilla chips
  16. Shredded cheddar cheese

Cooking Instructions

    Rinse and pat dry your chicken breasts, then cut into chunks and set to the side …….

    Heat some olive oil in a large pot …….

  3. 3

    Sauté your onions, peppers and garlic until fragrant, just a few minutes……

  4. 4

    Now add in your black pepper, crushed red pepper, ground cumin and taco seasoning, sauté for several minutes……

    Next add your cut up chicken breast and sauté until chicken is cooked through……

    Add in your black beans, diced tomatoes and cold water, bring to a boil, stirring occasionally…..

    Add some cooked white rice into a bowl ……

    Spoon some of your chicken on top of the rice …….

  9. 9

    Add some broken pieces of tortilla chips on top of chicken…..

  10. 10

    Sprinkle shredded cheddar cheese on top …..then serve and enjoy 😉!!
