Ingredients

~25 to 35 minutes
8 to 10 people
  1. 8chicken breasts
  2. 2large eggs
  3. 1/2 cuphoney
  4. 1and 1/3 cups chopped nuts (I used walnuts and pecans)
  5. 1and 1/3 cups breadcrumbs (I used a mix of Panko and regular breadcrumbs)
  6. 1/4 cupunsalted butter, melted
  7. Salt and pepper to taste

Cooking Instructions

    Chop the nuts finely.

    Whisk the eggs and honey until smooth.

  3. 3

    Trim the chicken breasts of any extra fat, if desired. Lightly salt them and add a few grinds of fresh pepper.

    In another bowl, combine nuts and breadcrumbs. You may add additional salt, pepper, and even some garlic powder and/or paprika, if you like.

    Preheat the oven to 350°F.

    Line two 9x13” baking pans with aluminum foil, then spray with cooking spray (or oil lightly).
    Set up the chicken, egg mixture, and breadcrumbs in a row as shown.

    Dip the chicken into the egg/honey mixture, then coat with the nut/breadcrumb mixture. Place into the prepared baking pan.
    Drizzle the chicken with melted butter.

    Bake the chicken for 25 to 35 minutes or until done.
    The time they need to cook will depend on their size. Start checking doneness at 25 minutes to avoid over-baking.
