Kielbasa, Cabbage, and Potatoes

Ingredients

  1. Vinegarette
  2. 1/4 cupolive oil
  3. 2 tbspred wine vinegar
  4. 1 tbspstone ground mustard
  5. 1 clovegarlic
  6. 1/4 tspsalt
  7. Pepper
  8. Kielbasa and Veggies
  9. 8 ozKielbasa
  10. 16 ozbaby red potatoes
  11. 1/2 headcabbage
  12. 2 tbspoilve oil
  13. salt and pepper
  14. Handfulchopped fresh parsley

Cooking Instructions

50 minutes

    Preheat the oven to 400 degrees. Mix together the Vinaigrette ingredients in a dressing pourer and set aside.

    Cut the sausage into 1/4"rounds. Wash the potatoes and cut them into 1/4" rounds as well.

  3. 3

    Place on the baking sheet and drizzle with 1 tbsp of the olive oil. Sprinkle with salt and pepper.

    Remove any dirty leaves from the cabbage. Cut the stem off and cut the cabbage in half. Cut the half head into 1-inch wide slices, then cut each slice in half. Brush the other tbsp of oil onto the cabbage.

    Roast for 20 minutes. Remove from the oven and flip everything. Roast for another 10-15 minutes.

    Top with parsley and drizzle with vinaigrette.
