One pot sausage, veggies and rice

Ingredients

  1. 1-12 ozpackage of sausage (I used beef)
  2. 2bell peppers chopped (I used 1/2 of each; red, yellow, orange)
  3. 1onion (yellow or red) chopped
  4. Minced garlic
  5. Salt & pepper
  6. 2 cupsChicken broth
  7. 1 cupwhite rice
  8. 2 cupsbroccoli
  9. 1 cupcheddar cheese

Cooking Instructions

    Cut the sausage and Sauté in a pan over medium heat, 4 min each side or until brown

  2. 2

    Set aside in bowl covered.

    Then using same pan, sauté peppers and onion. Then add minced garlic (to taste) and salt and pepper.

    Add 1 cup white rice and stir/sauté for 1 minute before adding 2 cups broth. Bring to boil and let simmer on low for 14 minutes.

    After 14 minutes, add broccoli to the top without stirring. Let simmer for 7 more minutes.

    Then add the cup of cheese and sausage to the pan and stir together and serve!
