Sieve besan and mix in rava, salt, sugar and citric acid

Add 1 cup water, in batches, to make a lump free batter. Cover and rest for 10 minutes.

Meanwhile, ready a steamer with enough water, and bring it to boil. Grease a plate and place in the steamer.

Now add Eno(blue pack) and mix quickly to get a frothy mixture.

Pour batter into the greased thali. Cover and steam khaman for 12-15 minutes on full gas.
Do not open in between. - 6
Check with toothpick, if it comes clean, khaman is done.
Take out the thali and place on a wire rack and cool completely.Cut into squares and Pour vagaar. - 7
For vagaar:
In 3-4 tbsp oil + rai+ til +green chillies+hing
When it splitters, add 1/2-3/4 cup water +salt+sugar 2 tsp and bring to boil - 8
Cool vagaar until warm and pour on khaman. Allow water to get absorbed,. Serve after 30 minutes.

Garnish with fresh grated coconut and coriander.
Enjoy with fried green chili, chutney and besan kadhi
