Add the oil in a cacerola 🥘 when the oil is hot add the mashed garlic. When the garlic is turning dark add the meat.

When the meat is cooked and looks dark brown then add the vegetables and seasons.

When you already added the vegetables and seasons mix well and leave cooking for about 5 minutes.

Then add the 3 cups of water to the mixture.

When start to broiled add the 2 cups of rice mix well and add some salt if needed.

When the water dry then you move the heat to low and put the lid and let it cook for about 25 minutes or until de rice is softer.

The serve with green salad, avocado or your favorite side.

This dish, which kind of falls somewhere between paella and jambalaya, was a happy accident. It came about a few nights ago, when I repurposed some leftover tomato pilaf (I've been all about pilaf lately). The rice was fluffy, soft but my mushy, super-flavourful, and even formed a bit of oh-so-irresistible socarrat (the crusty, crunchy bottom of a paella that everyone fights over). I decided to repeat the dish, but with a few extra ingredients. Once again, it turned out fantastic. The only niggle was that the socarrat wasn't quite as prominent (as you can see in the picture).
