Ingredients

  1. 1 cupoats
  2. 1/2 cupalmonds
  3. 2 Tbspflax seed
  4. 2 (14 oz)cans chickpeas drained
  5. 2 Tbspsoy
  6. 2 Tbsptomato sauce/kethcup
  7. 1small onion chopped fine
  8. 2ribs celery chopped fine
  9. 2small/1 big carrot diced fine
  10. 1 cupfinely chopped mushrooms
  11. 3+ cloves garlic chopped
  12. 1/2 teaspoonsea salt
  13. 1/2 teaspoonblack pepper
  14. 1 teaspoonpaprika/smoked paprika
  15. 1 teaspoononion powder
  16. 1 teaspooncumin
  17. 1/2 teaspoonthyme
  18. 1/4shy teaspoon cayenne
  19. 2 Tbsp ketchup
  20. 1 Tbsp honey
  21. 1 Tbspbalsamic

Cooking Instructions

    Saute chopped veggies with 1 tbsp water for about 7 min

    Preheat oven to 350

  3. 3

    Food process the oats, flax and nuts to small flourish mix

  4. 4

    After 7 min, add seasonings to veggies

  5. 5

    Add soy, tomato sauce and garbanzos to flour mix. Pulse until mixed, but lumpy

  6. 6

    Stir veggies and bean mix together

  7. 7

    Make glaze with ketchup, honey and balsamic.

  8. 8

    Line meatloaf pan with parchment, fill and top with glaze

  9. 9

    Bake 60 min, rest 15, serve.
