Ingredients

  1. 1/2medium kabocha squash, seeded & cut into 1/2” cubes
  2. 3medium Yukon gold potatoes, cut into 1/2” cubes
  3. 1medium sweet potato, cut into 1/2” cubes
  4. 1medium red onion, peeled quartered and separated into pieces
  5. 1/4 ccoconut oil
  6. Salt & pepper to taste

Cooking Instructions

    Preheat oven to 475 degrees.

  2. 2

    Add all veggies to gallon zip lock bag.

  3. 3

    Add seasonings and oil to veggies in bag. Zip up bag and rub oil & seasonings over all veggies until we’ll coated.

  4. 4

    Transfer veggies to a large roasting pan and spread into an even layer.

  5. 5

    Bake in preheated oven for 30-40 minutes.

  6. 6

    All done!
