Ingredients

8-10 servings
  1. 1 (16 oz.)Box elbow macaroni, 9 minutes
  2. 1red bell pepper, diced small
  3. 1/2medium onion (your choice) diced small
  4. 3 stalkscelery, sliced thin
  5. 10 oz.Bag frozen peas, rinsed well
  6. 2 Tblslemon juice
  7. 8 oz.Bag Colby and Monterey jack shredded cheese
  8. 3 TblsDill pickle relish
  9. 1 Tblscreole mustard 😋
  10. 1 cupmayo
  11. 1/2 cupmilk or cream
  12. 1 packetRanch dressing mix
  13. 1 tspwhite sugar (optional)
  14. 3boiled eggs, chopped (optional)
  15. Garnish= greek peppers, also optional

Cooking Instructions

  1. 1

    Boil macaroni 9 minutes, drain, rinse with cold water, and drain again

  2. 2

    Add your bell, onion, celery and peas, then add lemon juice and stir. Sometimes I add the juice from the Greek peppers

  3. 3

    Add the relish, cheese, sugar and packet of ranch mix then give it a stir

  4. 4

    Add the mustard, mayo and cream to a bowl and whisk to emulsify then pour onto macaroni and stir to combine very thoroughly. Taste and add more seasoning if desired

  5. 5

    Place in airtight Tupperware and put in the fridge for at least 2 hours, overnight is better. ENJOY 😋❤️😘
