Ingredients

  1. 1 lbboneless skinless chicken thighs diced
  2. 6-8 ozrice noodles
  3. 2Bell peppers (red and yellow) sliced
  4. 2Jalapeños sliced (optional for some heat)
  5. 2baby bok choy sliced
  6. 1/2 tspblack pepper
  7. sauce ingredients
  8. 3 Tbspsoy sauce
  9. 3 Tbspfish sauce
  10. 1 Tbspfresh lime juice
  11. 1 Tbspsriracha sauce
  12. 1 tsphoney
  13. 2garlic minced

Cooking Instructions

    Mix all sauce ingredients in a small bowl and set aside.

    Cook noodles: Add rice noodles to a pot of boiling water and cook for 4 minutes. Drain in a colander and rinse with cold water. Transfer to a bowl and add 1-2 Tbsp olive oil and mix to prevent sticking.

    Add oil to a wok or large skillet and heat on high. When hot add chicken and cook until just done. Remove to a bowl.

    Add the bell peppers, jalapeños, bok choy, and black pepper to the skillet and cook until the vegetables are just starting to soften.

    Add in sauce and noodles and mix well. Add in the chicken and any juices and mix together.

    Plate the food and garnish with cilantro. Serve and enjoy!

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
